Our story
It all started when Roy Pfaltzgraff got tired of cooking and eating separate meals for himself and his partner. Meals are about community, not frustration and choking down terrible tasting, gluten-free imposter breads.
He got to work using grains raised on his family’s regenerative farm and started creating baking mixes that tasted great and made everyone happy.
One thing about Roy, he likes to talk about great things. And once he started talking about how good the mixes were, people started wanting to try them. And then buy them.
The family farm, PFZ Farms, decided to brand the mixes and sell them in local Colorado farm shops and farmers markets.
Good things get known and word of mouth spread about the now 100% gluten-free farm and their delicious mixes, and local bakeries started asking for flour and mixes in bulk. It was time to level up.
Haxtun Heritage Mills was born. Roy and his fiancée Emily began the hard work to make this Cottage Foods business into a full fledged food manufacturing business.
The millhouse has been built, a larger mill for processing arrived from Austria, and they are now the only dedicated gluten-free millhouse that sources from the only gluten-free farm, well, that we know of!!

Our ingredients
We source all of our grains from Pfaltzgraff Farms A regenerative farm of 2,000 acres, all 100% gluten-free. Want to know more about the journey of the grain in each bag?
You’ll find a QR code that takes you to a chart on our site that lists each lot number and where the grain came from. Tracing all the way back to the seed.
Now that’s something no other gluten-free company can do. We still test each lot of grain for traces of gluten down to 10 parts per million, which is higher than is required by the National Celiac Association.
We do not have third party verification because farming, milling, and marketing costs enough. The consumer and the retailer, as well as the farmer, deserves the option of healthy food without the additional cost. We know what you’re getting, and you can see it for yourself. Let’s keep food clean and local, without things that need to be imported or processed around the world.
You also won’t find additional ingredients your grandma couldn’t pronounce. Look at those ingredients and you’ll only find simple, recognizable ingredients. The only one you might question is xanthan gum, which is used to bind everything. The best part is that xanthan gum won’t give you additional digestive distress like many of the other ingredients found in gluten-free baking mixes. Keeping it simple, just like grandma made it.

Are you Certified Gluten-Free?
No, we’re not certified. We have found that third-party certification costs upwards of $20,000 per year. To cover these costs, we’d have to increase our pricing putting our products out of reach for many people. We test every batch we mill down to 10 parts per million, and you can check our test results through the Transparency page. We discard any batch that shows any gluten in it, so you can be sure that what you’re getting is the best possible option. We’re confident in our testing since we source from a 100% gluten free farm, so none of the equipment from planting through harvest and milling ever touches grain with gluten.
What is Transparency?
The transparency we provide you is better than you can get anywhere else in the food industry. As a consumer and buyer, you get to see every aspect of our operations from the farm through milling and packaging on our Transparency page. Are you Organic?
Organic producers employ tillage, which is a practice that kills the soil microbiome. Just like in your gut, these little fungi and bacteria help plants to thrive and absorb the best nutrients possible. When you take an antibiotic, it’s very similar to tillage of the soil. We have chosen to use herbicides prior to planting crops to kill and manage weeds. With our soil health practices, we use upwards of 75% less herbicides and fertilizers than what we used prior to farming regeneratively, ensuring that we can raise healthy crops in even healthier soil, without compromising your health.
Are you Regenerative?
YES!! Our practices employ those that make up the general guidelines for regenerative practices. Our soil has the highest organic matter in our area and that results in higher nutritional value for our grains. When you eat our flour or mixes, you’re getting sometimes over 300% higher nutritional value in micronutrients than you would with conventional and sometimes organically grown grains.

Why are your mixes all priced the same?
Because most grains are priced on the commodity market, you’ll see fluctuation in pricing because someone else is determining the value of the product. Since we raise our grains and our prices are set by our operation costs, we keep everything simple. The price you pay goes straight to the mill, the farm, and the people we get to work with. If there is ever a significant shift, or a unique grain being raised on the farm, you will see pricing changes then.
